To make restaurant-style pav bhaji at home, then follow the recipe given here

2 tbsp butter, 2 red tomatoes finely chopped, 1/4 cup peas, 1/4 cup capsicum finely chopped, 2 boiled, peeled, and mashed potatoes, 1 tsp salt, 1 1/4 tsp pavbhaji masala, 3 tsp Kasoori fenugreek, 3 tsp chopped coriander, 1 tsp ginger and garlic paste, juice of 1/2 lemon, 1 onion chopped and water
Heat 1 tbsp butter, add tomatoes, peas, capsicum, mashed potatoes, salt, and 1/2 cup water, and cook for 10 minutes.
Mash all the vegetables with a masher.
Add 1-1 teaspoon red chili powder, pav bhaji masala, kasoori fenugreek, and 2 tablespoons chopped coriander and fry. Now deposit the vegetable in the sides of the pan, leaving the center empty.
Melt 1 tbsp butter in this empty portion and fry 1/4 tsp red chili powder, 1/2 tsp pav bhaji masala and 1 tsp kasoori fenugreek and chopped coriander, ginger-garlic paste, chopped onion, and lemon juice.
Keep stirring after adding 1/2 cup of water.
Again add 1/2 cup water and cook for 5 minutes. Mash again.
Serve by adding chopped onion, lemon, coriander, and remaining butter on top.
- Cut the pav in half. Mix all the ingredients of the pav in hot butter and apply it on the cut side of the pav.
Toast on a hot griddle and eat with vegetables.
